Yummm, steak is one of my favorite foods. I've never cooked it myself, but I like mine rare to medium rare, with a nice pink-red center, with a baked potato filled with butter and sour cream Little thongue man

The best steak I ever had was at the "Capital Grille" in Orlando Florida on International Drive.
It was a porterhouse steak which is fillet and sirloin in the steak separated by a bone I think.
Cooked to medium, served with rustic mash potato.

Soooooo good and worth every dollar (not cheap!!)

NB - definately not using microwaves, a deep fat fryer, bleach or any other obscenity...

Ok...

Salt and black pepper on both sides of the steak....
Frying pan on the heat...
Keep it on the heat...
Still keep it on the heat and do nothing....
Keep it on the heat til it's so damn hot you think it might burst into flames....
Then add a wee drop of oil...
About 30 seconds after that, (carefully) pop the steak in...
After about 30 seconds flip it (or til it's browning/criaping on one side)...
Same for the other side...
Then you take it off the heat for 5 minutes and set it to the side...
(This lets the meat 'relax' again, and maintains the moisture and loveliness...)...
Then you pop in a really hot oven, and cook it to your desire...
Rare's best though right?
Bang on some onion gravy (or 'jus' as the posh dudes say), some creamed spuds and brocolli...

Biff baff and boof.

Aaaahhh....the excitement of steak-cooking....it comes over you like a red mist.....


I'm generally impressed with the level of cooking knowledge displayed throughout the posts, and I can only thank you all...
My next steak will be done to perfection!
I don't think I'm too keen on the 'still mooing' rawness of some suggestions, or the insanely charcoal-ridden solutions from others, and some *ahem* 'flavourings' are, er, imaginitive...
I'm gonna try the nice seasonings, on a thick steak, on a smouldering BBQ (with some oak chips maybe), and gently cook it through, so it's still raw-ish, well flavoured and juicy, and just falls apart in your mouth......
